Chocolate Vegan Baileys Chia Seed Pudding
Enjoy the holidays with this rich and creamy plant-based dessert made with chia seeds for an added health kick! These little seeds are packed with magic such as omega-3, antioxidants, fiber, and protein. They help support your digestive and heart health, boost your metabolism, and help your skin glow. Such power in such a tiny seed!
½ bar of your favorite dark chocolate (I used eatingEVOLVED)
½ cup canned coconut milk
1.5 oz of Baileys Almande (almond milk liqueur)
2 tbsp maple syrup
1 vanilla extract
½ cup of chia seeds
Dash of pink himalayan sea salt
Place the chocolate in a microwave safe bowl and heat at 30 second intervals (stir in between) until the chocolate has melted. Add the coconut milk, Baileys, maple syrup, vanilla, chia seeds, and salt. Stir until combined. Let the mixture sit in the fridge for 2-5 hours so the pudding can set (preferably overnight). Serve in festive glassware and get ready to eat!
